We?re seeking a Sous Chef to join the Dining Services team at the Canadian Forces Base on the Halifax waterfront. As the Sous Chef, you will report to the Food Service Director and is responsible for providing culinary leadership in the planning, production, administration and management of a high-quality food service at the CFB.

Job Responsibilities

  • Schedules and assigns daily work activities to staff and supervises the completion of tasks.
  • Trains and guides culinary team members on job duties, standard food safety and sanitation procedures, cooking methods, etc.
  • Cooks and prepares food following production guidelines and standardized recipes
  • Sets up workstation with all needed ingredients and equipment
  • Prepares ingredients by measuring, weighing, mixing, chopping, trimming, and peeling food items
  • Safely uses all food utensils including knives
  • Operates equipment such as ovens, stoves, slicers, mixers, etc.
  • Bakes, roasts, broils, steams, and uses a variety of cooking methods on meats, vegetables, and other foods
  • Arranges, garnishes, and portions food following established guidelines
  • Properly stores food by following food safety policies and procedures
  • Cleans and sanitizes work areas, equipment, and utensils
  • Maintains excellent customer service with a positive attitude towards guests, customers, clients, co-workers, etc.
  • Follows Aramark safety policies and procedures including food safety and sanitation
  • Ensures security of company assets

Qualifications

  • 5+ years? experience in culinary field required
  • 2+ years? experience in leadership role required
  • Culinary degree or Red Seal considered an asset
  • Strong relationship building skills with clients and customers
  • Experience with food and labor costing considered an asset
  • Assertive, professional and positive with ability to lead in a stressful environment
  • Must be able to work independently with limited supervision
  • This position will require occasional lifting, carrying, pushing, pulling of min. 25 lbs.
  • This position will require standing for extended periods of time

This position is full-time, permanent with a Monday to Friday daytime schedule. Due to the nature of the work site, the successful candidate must submit to and successful clear a background check including finger-printing. This process will be covered in the interview, including timelines.
