  • Participates with/without inmates in the preparation and assembly of meals by performing duties such as:
    • Planning of cooking schedule and meal preparation including any modified diets, or special needs
    • Plans required quantities of ingredients for assigned food production area
    • Maintains and completes required Quality Assurance records
    • Assists cook supervisor with inventory control including proper product rotation, and food orders to meet inventory requirements from authorized suppliers
    • Insures that meal service carts are loaded properly and on schedule.
    • Supervision of unloading of carts and trolleys and completes washing duties as may be required.
    • Assists in unpacking and restocking of supplies
    • Maintain all kitchen areas in a clean and orderly condition
    • Supervision of cleaning duties with/without inmates that may include but not limited to sweeping, damp mopping and washing of floors, table tops and chairs, trolleys, carts, and various kitchen counters and equipment as per the cleaning duties list.
    • Removal of garbage to appropriate area and breakdown of cardboard boxes as per that sites policy
    • Work efficiently and handle all equipment and products safely.
  • Performs any reasonable request as assigned or directed by management in a suitable timeframe.
